Job Summary
In this role as Senior Sous Chef, you will be responsible for planning and managing food preparation in the restaurant kitchen. You will lead the kitchen staff during the Head Chef’s absence, guiding and supervising the junior kitchen staff during food preparation and assisting the Head Chef in menu preparation. You will be an innovative professional who is willing to participate in creating delicious seasonal menus and meal designs. You will carry out the role of cost controlling and maintaining food costs and supervise storage, stocking, and sanitation procedures. You will assist in managing and
training new personnel, scheduling staff work hours, and doing performance reviews.
Responsibilities:
- Develop new menu options based on seasonal changes and customer demand
- Assist with the preparation and planning of meal designs and adjusting recipes as needed
- Develop and maintain standard recipes to ensure consistent quality and portion control
- Ensure that kitchen activities operate in a timely manner
- Ensure efficient, cost-effective operation and profitability of food production
- Resourcefully solve any issues that arise and seize control of any problematic situation
- Monitor and record inventory, and order new supplies if necessary
- Provide support to junior kitchen staff with various tasks including line cooking, food preparation, and dish plating
- Manage the kitchen team in the head chef’s absence
- Collaborate with other departments, such as front-of-house staff, to ensure smooth and efficient operation of the restaurant
- Ensure good stock rotation is maintained and delivered
- Train kitchen staff to meet restaurant and kitchen standards
- Create schedules for kitchen staff and evaluate their performance
- Adhere to and implement sanitation and safety regulations
- Stay up to date with industry trends and innovations and recommend new ideas to improve kitchen operations
- Produce high-quality plates both design and taste-wise
- Maintain a positive and professional approach with coworkers and customers
Skills
Requirements/Skills:
- Bachelor’s degree in Culinary Science or a relevant field
- Previous experience as Sous or Junior Sous Chef level
- Strong knowledge of cooking methods, kitchen equipment, and best practices
- Good understanding of Apple Mac and restaurant software programs
- Teamwork-oriented with outstanding leadership abilities
- Excellent communication and interpersonal skills
- Accuracy and speed in handling emergency situations and providing solutions
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously
- Excellent record of kitchen and staff management
- Ability to bend, stand, and stoop for long periods of time, and work long hours in hot conditions
- Safe Food Handling Certification
