Job Description

MAIN OBJECTIVE OF ROLE

To provide analytical analysis of catering operations; provide culinary expertise and skills for the Catering Department of flydubai across all aircraft, classes of travel and destinations.

KEY RESPONSIBILITIES

1. Develop and maintain menus based on class, region and caterer for all flydubai destinations.

2. Issue directives to caterers in network on menu and quality components based on passenger and crew feedback and comments.

3. Analyse complimentary catering (JC & YC) wastage and shortages and develop and implement action plan to reduce wastage and improve customer experience with correct levels of catering onboard.

4. Analyse the Buy-on-Board sales by route and determine best levels of stock to improve revenue and enhance customer satisfaction.

5. Take responsibility for and establish start-up caterers in out-stations in relation to menus, culinary preparedness and provide on-site support for start-up flights.

6. Develop culinary skill levels in out-station caterers through audits and feedback reviews.

7. When developing menus make use of local produce and indigenous dishes to enhance FZ onboard product.

8. Create departmental reports relating to meal numbers/wastage/take-up rates for internal and external customers and suppliers.

9. Update Controlled Documents/manuals in relation to culinary requirements as required.

Qualifications

MINIMUM QUALIFICATIONS / EXPERIENCE/ KNOWLEDGE / SKILLS

Minimum Education Level Required

  • Bachelor’s Degree in Catering or Hospitality.

Education / Experience Specific Requirements

  • Requires Knowledge of Microsoft Office Suite (Word, Excel, PowerPoint, Outlook)
  • Preferred No. of Years (with Relevant Degree) – 5
  • Preferred No. of Years (without Relevant Degree) – 8

Systems, Licensing, Language or Certification Requirements

  • Ability to obtain a Permanent Pass for Dubai Airports and hold or obtain a current Dubai Driving Licence that can be used to obtain a Dubai Airports Airside Driving Permit.
  • Audit certificate – HACCP qualified preferred.
  • Chef qualification
  • Language skills relevant to target market – Hindi for India; Russian for Russian/CIS areas an advantage.

ISR Requirements

Reads and complies with the ISR policies of the Company and diligently reports any weakness or incidents to the respective Line Manager or the Information Security team. Completes all required ISR awareness sessions and follows associated guidelines in the day to day business operations.
