<strong>EXECUTIVE SOUS CHEF </strong><p><br></p><strong>What Does This Job Involve</strong><p><br></p>Working under the Executive Chef, the Executive Sous Chef must assist the management in the development of new concepts by creating and introducing new menus. A major responsibility is to create standardized recipes, keep food cost at minimum, initiate and sustain an ongoing research in the F&amp;B industry. Maintain controls and to ensure quality, consistency and hygiene both for products and equipment in the main kitchen. The Executive Sous Chef allocates resources, executes controls, trains and develops kitchen staff, systemizes daily functioning, and maintains efficient kitchen operations in the hotel.<p><br></p><strong>Qualifications</strong><p><br></p>Bachelor of Professional Studies degree in Culinary Arts Management, Baking and Pastry Arts Management and Culinary Science.<p><br></p><strong>Experience</strong><p><br></p>Minimum (10) years.<p><br></p>It is necessary that he/she have had experience in setting up and opening up new restaurants. It is also preferred that the candidate has moved onto a restaurant chain company or international hotel chain.<p><br></p><strong>Exposure</strong><p><br></p>To have got enough exposure in the fundamentals of kitchen operations as a kitchen trainee. As a chef de partie, he/she must have been familiar with particular cuisines, range cooking and kitchen supervision. Candidate, as an Executive Sous Chef should have had enough exposure in most of the popular cuisines and the managerial aspects of kitchen operations. Having worked in a restaurant chain, should be familiar with handling multi cuisine operations.<p><br></p><strong>Attitude</strong><p><br></p>Must have a positive attitude and a willingness to learn. Must be enthusiastic enough to absorb and innovate new ideas, study new cuisines and concepts. A good team player who excels in sharing new ideas and encouraging team members to be innovative and bold in creating new concepts.<p><br></p><strong>Principal responsibilities include but are not limited to:</strong><p><br></p><ul><li>Be responsible for efficient daily functioning of the department.</li><li>Assisting in kitchen management and reporting.</li><li>Staffing and training for all kitchen operations.</li><li>Streamlining and systemizing operations within existing as well as new ventures.</li><li>Formulating new ideas and evaluating opportunities.</li><li>Ensure dishes are prepared to recipes and consistency is maintained in the dish out of all orders.</li><li>Standardize recipes and initiate and sustain research in the F&amp;B industry.</li><li>Maintain kitchen specifications, cooking procedure sheets and all build up and spread sheets.</li><li>Develop all necessary manuals in liaison with the operations team.</li><li>Train and develop F&amp;B production staff.</li><li>Should monitor closely and continuously the activities of chefs de cuisines and ensure smooth running of the entire kitchen.</li><li>Should be able to motivate and lead the team from the forefront.</li><li>Take up any related responsibilities handed over by the management.</li><li>Assist management in the development of new concepts.</li><li>Must have the capacity to develop and manage a multi-unit, multi-concept operation in coordination with the Executive Chef.</li></ul><p><br></p><strong>Requirements:</strong><p><br></p><ul><li>Bachelor of Professional Studies degree in Culinary Arts Management, Baking and Pastry Arts Management and Culinary Science.</li><li>Excellent computer system skills</li><li>Male</li><li>Asian or European</li><li>35 to 55 years old</li><li>Minimum 10 years’ experience in the hospitality industry, with significant luxury and international experience.</li><li>Experience handling multi-outlet property</li><li>Experience in the Middle East is a plus</li><li>Pleasing personality</li></ul><p><br></p><strong> Salary – Negotiable </strong><p><br></p><strong>Skills</strong><p><br></p>Culinary Degree/Training<p><br></p>culinary<p><br></p>By applying you confirm you have these skills.<p><br></p>{{( (data.isCarriBrandActivated &amp;&amp; mode === ‘CARRI_ONLY’) ? ‘Apply Via Chat’ : ‘Apply’) | translate}}
