Western Executive Sous Chef

The Western Executive Sous chef heads the Kitchen’s leadership team and provides leadership and management for the Kitchen ensuring thorough people development together with long-term growth and profitability of the department, division, and Hotel.

The primary responsibilities for Western Executive Chef is to ensure superior quality and consistency in preparation of all food items through the effective management of our employees in the Kitchen.

Key Functions

  • Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen Department through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic operational planning

  • Directs all aspects of managing the kitchens and kitchen teams, ensuring the quality preparation of all menu items and proper handling / storage of all food items in accordance with the standards

  • Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration

  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control

  • Ensure that sanitation standards as set forth by Four Seasons and local regulations are in compliance as well as the cleanliness and organization of the kitchen

  • Maintain control systems which will assure quality and portion consistency, ensure that all kitchens provide nutritious, safe, eye-appealing, properly-flavored food. Coordinates the purchase of all foods and develops menus, maintaining approved food and labor costs

  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments

  • Reviews daily activities of the following: house count, forecasted covers by outlet, catering convention activities, purchases, meeting/appointments, VIPs and special guests

  • Meets with head chefs to review daily specials, schedules, assignments, anticipated business levels, banquet event order, banquet plate up assistance, post-function sheets, equipment needs, cleaning supplies, health/safety and sanitation follow up and any other information pertinent to meet business demands.  Establish day’s priorities and assign appropriate staff

  • Excellent communicator who works harmoniously with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation amongst departments to ensure a positive environment

  • Resolves guest complaints, handling all guest interactions with the highest level of hospitality and professionalism, accommodating special requests whenever possible

  • Takes action in all matters related to the safety, security, satisfaction and wellbeing of hotel guests and employees. Responds swiftly and effectively in any hotel emergency or safety situation

  • The ability to react and adjust to changing business environments and lead the team in ensuring efficient financial management of the business
