Commis1 – Cold Kitchen

We are looking for a Commis1 to be an effective member in Pullman Zamzam Madina and to be a great assist in the development of the hotel.

What you will be doing:

– At the start of the shift, checks all gauges, timers and knobs of machines to ensure all are functioning properly.
– Reviews special prep instructions and participates in the mise-en-place for said items.
– Prepares menu items in accordance with established recipe cards and methods.
– Checks all menu items prior to dispatch to ensure that these comply with established standards
– Personally checks on food taste regularly.
– Prepares mise-en-place as advised by superior.
– Minimizing spoilage, wastage and exercises the portion control.
– Collects supplies from the storeroom and checks completeness compared to the requisition.
– Insures inter-transfers are made as per consumption.
– Prepares spoilage/wastage reports.
– Follows cost control procedures.
– Assists in preparing requisitions.
