Job Description

It is the primary responsibility of the SR. ASSISTANT EXECUTIVE STEWARD to manage Assistant Executive Stewards, LD kitchen workers, Stove Cleaners, Utility Porters (kitchen) and Kitchen Workers. All duties are to be performed in accordance with departmental and Bellagio policies, practices, and procedures.

PRIMARY PURPOSE:

As an Assistant Executive Steward, you will be responsible for assigned operational functions within the department. You will also set the stage for guest experience with your welcoming smile and service. By understanding their unique stories and needs, you will own their experience to create
WOW
memories they will carry with them far and beyond their stay with us.

PRINCIPAL DUTIES AND RESPONSIBILITIES:

Supervise assigned operational functions within the department consistent with the strategic plan, fiscal budget, and the company’s short term and long-term profitability objectives

Supervise the delivery and measurement of guest service consistent with the company’s core service standards and brand attributes

Supervise assigned staff to include: hire recommendations that encompass the company’s diversity commitment, training, coaching, performance feedback, recommend and administer discipline, and scheduling

Provide ideas and suggestions for new products, services, technology and processes

Make routine inspections of all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained

Requisition new and replacement equipment as needed

Approve requisitions related to all cleaning supplies and equipment and monitor supply requisitions to ensure costs are kept to a minimum without losing quality and usage of materials

Maintain inventory and record keeping for all dinnerware, flatware and glassware, order china, glass and silver

MINIMUM REQUIREMENTS:

High school diploma or equivalent

Two (2) years of experience in Stewarding

Work varied shifts, to include weekends and holidays
